I’m serious, this is amazing! Salty, sweet, buttery and spicy. All my favourite things. What’s better is that it’s pretty healthy as buttery snacks go. I have such a sweet tooth! For years and years I would only eat sweet popcorn. I don’t just mean cinema style sweet, I mean butterkist toffee popcorn. The kind that sticks to your teeth. So when I first tried Orville Redenbacher cinema butter popcorn I was not a fan. It was all salty and savoury. Yuck. Fast forward a while and now I love it! It’s funny how tastes change isn’t it? How can you step up butter popcorn and make it even tastier. That’s right Garlic Sriracha Popcorn! It’s so easy to make as well! Pop some butter popcorn in the microwave. Whilst it’s popping, melt butter, sriracha and a little bit of sugar in a pan. Pour over the popped corn, spread on a baking sheet and bake for 5 minutes on a low heat. Nobody likes soggy popcorn, so the last bit is essential. You can use sriracha without extra garlic if you like, but I like it garlicky!

Confession time. I know it says somewhere on here that I make vegetarian meals. And I do, 99.9% of the time. But I’m actually a pescetarian. I became a pescetarian when I was 9, I walked down into the kitchen, asked my mum if I could be one, and obviously thinking it was just a phase, she said yes. When it carried on, she told me I had to keep on eating fish for protein (fair enough). I find it easier to call myself a vegetarian, and for most of the time I am. Apart from a few things as follows:
And last but not least, tuna pasta bake. A meal that I grew up with. A meal that I love. It might even be my favourite meal. I use a jar of sauce that you pour over uncooked pasta, sweetcorn and tuna and then shove in the oven. Top with cheese towards the end, strong cheddar of course, and serve. It was a staple in my childhood and uni years (although towards the end I was too skint to justify tuna, I’m glad that part of my life is over), and turns out it’s something I bonded over with my boyfriend. For you see it was the first meal he cooked for me, I say cooked, I mean assembled. … The post Quick No Boil Tuna Pasta Bake #SundaySupper appeared first on Mess Makes Food. via Mess Makes Food https://messmakesfood.com/quick-boil-tuna-pasta-bake/ Why hello there. Do you remember me? I used to run this blog. Then I started a graduate job and it slowed down a little. Then I took on a second job (more on that in a second) and the blog came to a complete stand still. I’m not really into the whole new year, new me business. Really you’re just setting yourself up for a fail. However, a new year did seem like a good opportunity for re booting my little ol’ blog, and so here we are. So about that second job? I’ve been developing recipes as well as styling them and taking photos. Exciting right? It’s been stressful and tiring trying to do my job in marketing and freelance work, but in the end I’ve loved every minute and am so grateful for the opportunity. The only downside is that whilst I’ve been cooking my little socks off in every spare minute I have, I’ve neglected the blog. And it’s my blog that got me the freelance work! Vicious circle. Today it seems I have come full circle though, whilst I was digging around in the fridge trying to magic some dinner, I realised I had an abundance of green vegetables all about to turn. These vegetables came from various jobs and from me buying pretty looking produce in the greengrocers promising myself I’d photograph it for my portfolio. This excess crop of vegetables gave birth to this beautiful, fresh and healthy soup. Best of all, it’s quick, simple and super adaptable. Got some mushrooms in the bottom of the fridge? That’s fine, throw them in (I did). Broccoli that you’re not sure how long it’s been in the freezer. In it goes (Guilty). Do what you want, make it thick or thin, spicy or plain. I’ve not kept a little secret for the past 9 months. Honest Dad! These were made for my very pregnant sister.
So I went missing for a little bit on the blog again as I finished up things at Uni and moved back home. However, as promised I will be posting every day in June before a blog re design, you’ll be sick of me soon. I’m living with my sister this month whilst she’s waiting to have her second little
Which leads me onto these. Despite the face she’s two weeks off her due date, she’s pretty keen to have my little niece now. I’m pretty keen too, seeing feet stick out the side of her stomach creeps me out far too much. After lots of Googling it seems that spicy foods, pineapple, balsamic vinegar and eggplant are rumoured to kick start labour. These ginger cookies kept showing up too. So we decided to give them a go. However, with my 2 year old nephew in the house you never do anything alone. Stood on a chair next to my mixer, he kept dipping his finger in the mixture saying ‘I try some now’, fully convinced he wouldn’t like it, I let him carry on. Mistake. Turns out a 2 year old can in fact love spicy cookies, cayenne pepper and all. I’d show you some photos of the messy, little fingers interrupted baking, however he insisted in baking naked. Each to their own. He also insisted being naked whilst he “helped auntie Lolly with camera”. Oh he’s just too cute to even consider being annoyed. So, do I have a … The post Spiced Labour Inducing Cookies appeared first on Mess Makes Food. via Mess Makes Food https://messmakesfood.com/spiced-labour-inducing-cookies/ Today was my first official day back at university. I’ve been back in the city for a week so I can work behind the bar I worked in during my first few years (I wish I could just blog!), but today was the first day on campus, at lectures. Dun dun dunnnn. I crawled out from under my duvet at 7am, blinking and rubbing my eyes, swearing slightly under my breath. My first lecture wasn’t until 9.15am, but I have the get the bus at least an hour beforehand to make sure I get there in time. How far away is the university from my house? 2 miles! Why can’t I drive? Because the parking on campus would bankrupt me. As you’ve probably worked out, by the time I got onto campus I was a grumpy and tired, and was about to face 4 solid hours of introductory lectures, and hour break and then another 2 hours. I stumbled out of the bus, into the cattle heard that was campus. Everyone is just so very keen on the first day back. Everyone goes to there lectures, everyone hangs about and chats, and nobody moves out the way. Grumble grumble. Needless to say 2 hours into lectures, I was deep in Pinterest on my tablet, dreaming of baking. What’s Caramel Apple Cookies?Caramel Apple Cookies is called for by this recipe. It is a mix of spices which you would find in an apple pie. And if you do not have a bottle of it available you are able to create your own mix! It is a combo of cinnamon. As it doesn’t occur here in Southern California so that I will love the nostalgia as well as the rain it attracts. I decided to create Xiu Mai now known as Vietnamese Meatballs. These meatballs are created for breakfast Vietnam but could be consumed at any moment. What is Xiu Mai ( Vietnamese Meatball )I believe whenever they consider xiu mai, most individuals today think of dim sum. Vietnamese xiu mai only means meatballs. There are lots of variations of xiu mai from Vietnamese meatballs with peas and a couple carrots into xiu mai. Baguette is meant by banh mi. The crust is much thinner and more crispy, along with also the crumb that is white is lighter and more airy than baguettes. Vietnamese Meatball Banh Mi (Banh Mi Xiu Mai) is a South Noodle dish. It is made up of springy and succulent pork meatballs (known as xiu mai) at a yummy tomato sauce. Folks would dip a parcel of banh mi to the sauce and eat it with a bit of this meatball. I remembered my mom’s braised meatballs with a great deal of juices. Yummy which I would dip the bread. You might consume them with rice and spoon the sauce over the corn. These freeze well. Upon reheating and should you spoon a few of the juices they will keep their juiciness. Xiu Mai – Vietnamese Meatballs RecipeServes: 4-5 INGREDIENTS – makes 17 large meatballs (enough for 7-9 Banh Mi sandwiches) For the Xiu Mai meatballs:
